For the past few weeks, when I’m not at my day job, I’ve been testing recipes for Pam Kraemer at Dulcet Cuisine. Pam is a chef and former restaurateur who’s line of high end bottled sauces, dressings and spice rubs are attracting national attention. She lives in Portland but her products can be found all over. Sauces, like lemon, dill and mustard sauce, madras curry marinade and balsamic dressing are delicious and versatile. Pam has created oodles of recipes suited specifically for each of her unique products. Check out the Dulcet website for more info and recipes. She’s up to some cool stuff! Testing and tweaking the recipes (and eating the results) was a blast. Two favorites from my testings are below. Dulcet is widely distributed at all west coast and southwest Whole Foods grocery stores. Pier One, Crate and Barrel, and Costco will also add her products to their shelves in time for the holidays. So keep your eyes peeled. Here in Portland, you can find Dulcet products just about anywhere–New Seasons Markets, Zupans and In Good Taste to name a few.
Terrace Rice Salad
1 c basmati rice

1. Follow cooking directions for rice on package.
2. Allow the rice to cool slightly, fluffing it with a fork.
3. Add the remaining ingredients to the rice and toss with Dulcet Madras Curry Sauce & Marinade.
Best served at room temperature. Serves about 4 as a side.
