I bought these two beauties at the Hillsdale Farmer’s Market last Sunday. It’s funny to wonder who was the first person to eat different foods. I think it was Johnathan Swift who said, “It was a bold man that first eat an oyster”. Definitely a desperate and hungry man. The artichoke is kind of the the same way. Only a tiny but delicious bit of each prickly leaf is edible. But it’s worth the effort to pluck each one off just to get to the heart. I usually dip the leaves into a little sauce, a mixture of equal parts mayo and sour cream, a couple squeezes of lemon, dijon mustard and a small handful of chopped dill or parsley, salt and pepper.

Have you every tried just a bit of curry in mayonaise for the dip? It is So easy and makes those chokes sing!!!
Artichokes are one of my favorite veggies! I love dipping the leaves in melted butter infused with garlic – delish!
seriously though, there are so many foods that I think I would have never gone near had I not known they are edible – who thought it’s OK to eat celery root? but hey, it’s delicious!

This purple tinged variety has so much more flavor than the grocery store variety. And aren’t they beautiful! I’m with you, I like mayo and a little sour cream. Melted butter with a squirt of lemon juice is good too.
